Beat the heat ..

Long hot summer days!! Fun times. As mentioned in one of my earlier posts, during summer I prefer eating cold salads and sandwiches to warm food. This sandwich has a different taste and could be eaten as a snack or a meal. The spread of this sandwich is made with yogurt and fresh vegetables. The mint leaves add in to the freshness. This is easy to make and is ready in minutes. Try it out and share with me your comments.

Ingredients: (Adjust the quantities of the vegetables according to your liking)

1 cup grated Cucumber

1/2 cup finely chopped Cabbage

1/2 cup grated Carrots

2 tbsp finely chopped Mint

3/4 cup thick Yogurt (strain out the water from the yogurt by leaving it in a strainer for 30 mins or use Greek yogurt. Adjust the quantity of yogurt to get the spread like consistency. (similar to cream cheese consistency))

Butter (to apply on the bread slices)

Salt to taste

Black Pepper to taste

Bread Slices to make the sandwiches

Directions:

  1. Mix in all the ingredients except bread and butter in a mixing bowl.
  2. Apply some butter to the bread slices. Now apply the prepared spread.
  3. Done.
Tips:
  • You can store the spread in the air tight container for a couple of days.

    I tried these out today, replaced the cabbage with shredded romaine lettuce, and mixed 1 spoon of miracle whip to the yoghurt, turned out awesome
