Cucumber in Summer

Quick, Easy, Tasty and Healthy… isn’t that what you want your cooking to be. Yogurt, cucumber and mint soup, brings in all these with it. This is cold soup and is ready in minutes. When you bite into the fresh green chillies its adds to the zing. The flavor of mint is very refreshing.

Ingredients: (for up to 3 servings)

1 Cucumber (seeds removed)

1 cup fresh yogurt

2 tbsp sour cream

1/4 cup milk

2-3 green chillies (or according to your taste)

3-4 stems of fresh mint

finely crushed black pepper (according to taste)

Salt to taste

Method:

Add all the ingredients in a food processor and blend them. Pulse it 2 – 3 times. The soup is ready to be savored :).
