For the ones with a sweet tooth

Hello there. I haven’t blogged for past few days. Travel, family visits, and school have kept me tied up. Looking forward to continue doing what I love the most.

Today I am sharing an Italian dessert recipe with you, which I came across online. ‘Panna Cotta’ – which means ‘cooked cream’. I fell in love with this dessert the very first time I tasted it. The great thing about this dessert is you could make it in various flavors. The recipe that I am sharing with you today is that of ‘Vanilla and Mango Panna Cotta’. The key ingredients of cream, sugar and setting agent (gelatin, agar agar (vegetarian sea weed gelatin)) remain the same. Just change the flavors to your desire. Add in fresh fruits to enhance the taste and the nutrition. Try it out and drop me your comments.

Ingredients: (for 4 servings)

For setting the Panna Cotta use any containers of your liking. (small shot glasses, any small glass containers. I used plastic cups)

For the vanilla layer:

2 cups half & half

1 cup 2% milk

3-4 pods of cardamom (remove the skin and crush the seeds into a fine powder)

Sugar – according to taste

1 1/2 packet of Knox gelatin (mix it in 12 tbsp of cold water and set it aside)

1 tbsp vanilla extract

For the mango layer:

1 cup mango pulp

2 pods of cardamom (remove the skin and crush the seeds into a fine powder)

2 -3 saffron threads (mix the threads in 2 tsp of milk)

1/2 packet of Knox gelatin (mix it in 5 tbsp of cold water and set it aside)

Method:

For making the vanilla layer:

  1. Mix half and half, milk, sugar and freshly ground cardamom together. Heat this mixture, till you see small bubbles along the edges of the pan. Make sure to keep stirring continuously while this is heating.
  2. Once this mixture is heated mix it with the gelatin mixture.
  3. Stir well so that all ingredients are mixed well.
  4. Now pour this mixture into the containers a little more than half the way.
  5. Cover it with cellophane wrap and keep them in the refrigerator to set and cool. It will take approximately 2 – 3 hours for these to set.

For making the mango layer:

  1. Mix mango pulp, saffron and freshly ground cardamom together. Heat this mixture, till you see small bubbles along the edges of the pan. Make sure to keep stirring continuously while this is heating.
  2. Once this mixture is heated mix it with the gelatin mixture.
  3. Stir well so that all ingredients are mixed well.
  4. Now pour this mixture on top of the already set vanilla layer.
  5. Cover it with cellophane wrap and keep them in the refrigerator to set and cool.
As I mentioned before, make changes to this recipe to include your favorite flavors. Some that I have tried our pistachio, rose, chocolate, strawberry, peach. If any of you know of a setting agent other than gelatin that is readily available in the food stores, please let me know.
