Gulabjamun Mithai Cake

Desserts (Indian desserts) are favorites in our household. You wake us up in the middle of the night, give us any mithai and we will gobble it in no time :). Gulabjamuns are on top of our favorite list. These are akin to fried donut holes, soaked in sugar syrup. I came across the cake version of this recipe a while ago. Since then I have tweaked it and I think I now have the winner. You take one bite and I bet you will want more. Do give this a try!

Ingredients

2 cups gulab jamun mix (easily available online or in any Indian grocery store)

1 cup all purpose flour

1 cup grated mawa/khoa

1.5 cups sugar

1 cup milk (at room temperature)

4 tbsp saffron flavored milk (soak 8-10 strands of saffron in milk and set aside for 1 hour)

2 tsp baking powder

1 tsp baking soda

2 tbsp fresh ground cardamom

a pinch of salt

Simple sugar syrup (1/2 cup sugar in 1/4 cup water. Just bring to boil and set aside to cool)

Method

  1. Preheat oven to 350 deg F.
  2. Grease a baking pan with some butter/oil/ghee.
  3. Mix gently all the ingredients except simple sugar syrup.
  4. Pour the batter in the baking pan. Once oven is hot, place the baking pan in the oven.
  5. It will take 30-40 mins to bake. Make sure to test whether done around 25 mins mark. Insert a clean knife in the cake. If it comes out clean, then it done.
  6. Remove the cake and poke some holes all around the cake using a fork.
  7. Pour the simple sugar syrup all over.
  8. Set this aside and let it cool completely.
  9. Once cool, invert in a serving tray. You can pour some rose water all around for added flavor. Garnish with some chopped nuts of your liking.
